Baking today.......

With the  temp actually dropping below 90 degrees, I thought today would be a good day to use up some ripe bananas and make a few loaves bread.  I love the smell!!


LOW-FAT BANANA BREAD
Nancy Malay
1/4 cup of Grapeseed oil
1 cup sugar
2 unbeaten eggs
1 cup mashed bananas
1/3 cup milk
1 tsp lemon juice or vinegar
2 cups flour
1/2 cup fat-free sour cream
1 tsp soda
1/2 tsp salt
Topping: 1 cup brown sugar, 1 tbsp flour, 1 tsp cinnamon
Fat-free sweetened condensed milk
Add sugar to grapeseed oil and blend together
Add lemon juice or vinegar to milk before adding to mixture. Add all dry ingredients.
Spray small loaf pans well with Pam, and pour batter about 3/4 full.  Mix sugar/cinnamon/flour mixture together then sprinkle on top of each loaf. Next, drizzle with the sweetened condensed milk.
Bake in a 350 degree oven for approx 30 minutes.
